Muffin Tin Monday - it's Halloween!

Hey there...long time no see!

It's Monday. It's Halloween week. Let's see some muffin tins.

I have been dreadfully absent from blogging for many months. It's maybe a little long of a story to share (and really, not interesting either). In a nutshell, I was very sick and took a long time to recover (boo!). I'm better now (yay!). But struggling to get back into old routines, like blogging. And laundry. And showering. (kidding...kinda).
To all who have emailed and sent messages, I am sorry I didn't get back to you! Email was overwhelming for awhile. I'm lame. I'm sorry.

Now, onto the Halloween muffin tins!

Muffin Tin Monday - Summer!

SUMMER is the theme of the week for Muffin Tin Monday! I hope by now everyone's school is out for summer vacation! 


We have been out of school for over a month already. I am in full-blown chaos mode with my crazy crew and the days are flying by faster than I imagined. It's Monday again already? Seriously? 

I am curious if anyone would mind (or notice?!) if Muffin Tin Monday went on hiatus until fall. If you have an opinion, please speak up in comments! I don't mind posting the link-up so others can share their muffin tin meals, but at this point I'm not sure if I'll be able to participate myself this summer. My intentions are there, but my follow-through is suffering. These Mondays just keep sneaking up on me!

Muffin Tin Monday - the ocean

Welcome to Muffin Tin Monday!

The theme of the day is The Ocean.

And to be totally honest, I totally cheated and am recycling a muffin tin meal I made almost three years ago!

- a sand pail (mini bento bucket full of vanilla yogurt and topped with graham cracker crumbs)
- a school of fish crackers
- octopus (hot dog shaped octopus!)
- strawberries... just because
- lobster shaped quesadilla
- fish shaped boiled egg

Muffin Tin Monday - Perfect Picnic

What? It's Monday again, already?! We are beginning week 3 of summer break and it's safe to say my brain is officially on summer schedule. I'm no longer capable of keeping track of days of the week. 

Tah-dah! My ultra simple picnic time muffin tin meal:

Top row:
- watermelon, carrots and cherries, mini sealed bite-sized sandwiches with a few pretzels*,
Bottom row:
- *repeat, grapes, more watermelon!

Pretty boring, right? Yep. :) 
Paige and Tyler shared this for a light lunch. Tyler stole Paige's watermelon, but she ate all the grapes. Seemed fair to me, but there was a lot of squawking involved.  A brawl didn't break out and they remained unscathed. So, win.  

Confession: I feel like I'm in the trenches of summer already, and I'm scared.

Muffin Tin Monday - Down on the Farm

What does Memorial Day and Muffin Tin Monday have in common? Today!

Totally lame joke? Yes!

Also totally lame? My muffin tin meal!

The scheduled theme for today is Farm, but mine is not themed at all. Actually there is a little secret theme imbedded here, it's called "leftovers" and it's what Tyler had for dinner last night:
- rice pilaf (lots of mushrooms, celery, and onion packed in there)
- steamed broccoli
- bratwurst
- ketchup for the sausage
- strawberries and carrots

Muffin Tin Monday - Nursery Rhymes

Welcome to Muffin Tin Monday!

Today's scheduled theme is Nursery Rhymes. :)

I totally phoned it in this week and whipped out this super simple muffin tin in mere minutes.

- Little Miss Muffet's spider, creeping up on her tuffet zucchini muffin
- Jack & Jill's pail full of dry roasted peanuts
- Mary's little lamb, waving from the top of a grape heap

Bottom row:
- Baa Baa Black Sheep (olives)
- Old Mother Hubbard's bare cupboard. Poor puppy. :(
- Twinkling Little Star, up above the world so high 

Those are dye-free organic "M&M" type candies in the star cup, the globe is a little piece of chocolate wrapped in earth-print foil.  Both these treats were found at Whole Foods in the bulk bins.

My intent for this muffin tin was to have Paige guess what nursery rhyme each space represented. This was a huge flop as it turns out Paige doesn't know the nursery rhymes!!! What what what?!! I was flabbergasted. After talking a while about them, she says they sound "kind of familiar", but definitely not second nature, not by a long shot. Yikes!  I guess we have a summer project on our hands: Nursery Rhyme Boot Camp.

Oh no! That's Timmy, and it looks like he fell in the well again! ;)

Ah, this muffin tin brought back a lot of memories for me! These are all tv shows I watched obsessively as a kid. Any other Land of the Lost fans? Did you ever think Timmy couldn't find his way out of a paper bag without Lassie to lead his way? Anyone else marvel at how Flipper could solve mysteries, catch bad guys, and rescue those boys week after week? Oh man, not pictured in this muffin tin, but I also loved Ben. That big bear? I wanted him to be my friend. I swear, those tv kids had the coolest pets....

Muffin Tin Monday | April Showers Bring May Flowers

The green handles for the umbrellas are from Lindt chocolate "carrots" I saved from Easter.

strawberry flowers on a kiwi backdrop, bento picks make the tulip stems and pretty daisies. 

April has felt especially rainy to me this year, not necessarily literally, but figuratively it has been a sad month. Death (a child from our elementary school passed away), disasters (Boston Marathon and West, Texas tragedies), and a diagnosis (not ready to talk about that yet). It's just been a month of yuck and heartache and I am so hoping May blooms with beauty and bursts with bliss. I have two friends who are having babies next month and that seems like a wonderful start. :)

Muffin Tin Monday | Blast to the Past - the groovy 60's!

This week's theme for Muffin Tin Monday is the groovy 60's!

Back row is jiving with some 60's lingo:
- groovy homemade pickles 
- free love blackberries
- far out grapes

Front row is hangin' loose with some 60's symbols:
- peace sign pretzel chips 
- flower power sandwich 
- tie dye yogurt 

The peace sign pretzels were a great fit for this themed muffin tin lunch! They are by a brand called Laurel Hill that I have found at Whole Foods. This variety is the "everything" flavor and they remind me of Chex Mix pretzels. Yummo.

The flower power sandwich was made using a big groovy daisy cookie cutter, and then the decoration on top is made with apricot and strawberry organic fruit leather. I used a mini petal shaped cutter from a 12 piece mini cutter set and a small circle cutter to piece that together. 

And finally, the tie dye yogurt was kind of a flop. I used 3 different flavors of yogurt: strawberry, blueberry and orange, and attempted to swirl it for a tie dye effect, but the yogurt didn't move the way I needed it to. Paige said it was "the yummiest", so I guess it's all good. ;)

Muffin Tin Monday - it's a jungle in here!

Hello! It's that day again, Muffin Tin Monday. Welcome!

A jungle theme was on the agenda and I scarcely scraped this together in time to share.

The top row is the jungle canopy - fresh kale chips.
The bottom row:
- coconut cookies, a parrot, monkey, and tiger. These are from the little box of treats I brought home from Disney World. 
- strawberries with an elephant bento pick
- banana chunks with a monkey bento pick

I was feeling pretty "blah" over this (lame) attempt at a themed muffin tin, but Paige took one look at it and exclaimed, "ooh! It looks like a jungle!". Well then!  Mission accomplished! ;)

Muffin Tin Monday | Happy Autism Awareness Month!

Hello! Happy Muffin Tin Monday to you!

Today is April Fools Day and the scheduled theme for today is The Joke's on You! 

When I first planned this theme I thought I'd do something like the ole meatloaf cupcakes with mashed potato frosting gag, jello worms, and the like. I was looking forward to watching my little ones puzzle over their odd food offerings.

But I changed my focus. I'm going with Autism today. April is Autism Awareness Month. And one week ago the CDC (Centers for Disease Control) released a startling statement: 1 in 50 school children have autism. And that's no laughing matter.

This month I'm going to be focusing on Autism Awareness, and like I did in April 2010, it will be a month of puzzle shaped food and autism awareness messages! Autism is no joke. But it's not all doom and gloom either. Having an autistic child has had a monumental impact on my life - a positive one!  I'm really excited to share about autism this month on the blog. :)

On to the muffin tin! It's puzzle time!

Muffin Tin Monday - puzzle time! April is Autism Awareness Month!

Back row:
- puzzle shaped pieces of cantaloupe and honey dew melon
- pretzel twists
- frozen organic strawberry yogurt puzzle piece

Front row:
- roasted chickpeas & pistachios in a blue silicone cup
- puzzling sandwich
- natural applesauce with blue sprinkles

The melon and sandwich were cut using sandwich cutters from the Lunch Punch puzzle set and the frozen yogurt puzzle piece was made with a silicone muffin pan.

The nuts are in a blue cup and the sprinkles are blue because blue is the official color of Autism Speaks "Light it Up Blue" campaign, which kicks off tomorrow.... 

"Each April 2, Autism Speaks celebrates Light It Up Blue along with the international autism community, in commemoration of the United Nations-sanctioned World Autism Awareness Day. Light It Up Blue is a unique global initiative that kicks-off Autism Awareness Month and helps raise awareness about autism. In honor of this historic day, many iconic landmarks, hotels, sporting venues, concert halls, museums, bridges and retail stores are among the hundreds of thousands of homes and communities that take part to Light It Up Blue."

 We will be lighting it up blue, how about you?
